Fanfare Reviews choice of healthy soup recipes.


Here at Fanfare Reviews we have  included the 3 healthy soup recipes that we had made ourselves using the Cuisinart Soup Maker when carrying out our review. These healthy soup recipes came from the Cuisinart soup maker machine recipe book and Cuisinart have kindly given us permission to reproduce the healthy soup recipes  here. Soup recipes – Tomato and Basil.

Serves 4 - Preperation Time 10 minutes CookingTime - 25-30 minutes
  • 1 tbsp olive oil
  • 25g butter
  • 1 onion, roughly chopped
  • 900g fresh italian plum tomatoes, roughly chopped
  • 2 cloves garlic, crushed
  • 700ml chicken or vegetable stock
  • 100ml dry white wine
  • 2 tbsp tomato purée
  • 1 bunch basil leaves, torn
  • 100ml double cream
  • Salt & freshly milled black pepper
  • Fresh basil leaves
  • Fresh crusty bread
  1.  Place the butter and olive oil in base of the Cuisinart Soup Maker. Set the timer to 1 minute and melt on low heat.
  2. Add the onion & cook for 4-5 minutes until softened but not browned. Stir regularly using the stir function.
  3. Add the tomatoes and garlic and stir.
  4. Add the stock, wine and tomatoe purée, bring to the boil on the high heat and then simmer for 15-20 minutes, stirring occasionally. Then add the basil, stir and then blend the soup on level 1 until smooth.
  5. Stir in the cream and heat through, (do not allow to boil).
  6. Pour the soup between 4 bowls, garnish with fresh basil, and serve with fresh crusty bread.

 Soup recipes – Carrot and Coriander.

Serves 4 - Preparation Time 10 minutes - Cooking Time 20 -25 minutes
  • 25g butter
  • 1 small onion finely sliced
  • 350g carrots
  • 1.5 tsp ground coriander
  • 700ml chicken stock
  • 75ml Greek style yogurt or crème fraiche
  • 700ml freshly chopped coriander
  1. Place the butter in the soup maker machine. Set the timer to 1 minute and melt on the low heat.
  2. Add the onion and carrotts and cook on low for 5 minutes, until the vegetables begin to soften. Stir regularly using the stir function.
  3. Add the ground coriander, stir and cook for a further minute, increasing the timer as necessary.
  4.  Pour in the stock and season. Bring to the boil on high heatand then simmer for 15-20 minutes until the vegetables are tender.
  5. Blend on level 1 until smooth. Stir in the yogurt and reheat on low, do not allow to boil.
  6.  Pour the soup into 4 serving bowls, sprinkle with coriander and serve.

 Soup recipes – Pea and Ham.

Serves 4 - Preperation Time 5 minutes - Cooking Time 20 - 25 minutes.
  •  1 tbsp olive oil
  • 200g pack chopped pancetta or bacon lardons
  • 1 onion, roughly chopped
  • 1 leek, cleaned and roughly chopped
  • 2 cloves garlic,crushed
  • 500g frozen peas
  • 1 tsp dried thyme
  1. Heat the oil in the base of the soup maker machine.
  2. Set timer to 1 minute and heat on the low setting.
  3. Add the bacon and cook for 1-2 minutes on low.
  4. Add the onion and leek and sauté for 4-5 minutes to soften.
  5.  Add the garlic, peas, stock and thyne, set to high heat and bring to the boil.
  6. Add some freshly ground salt and black pepper. Reduce the heat and simmer for 12-15 minutes.
  7. Turn off the heat and blend on level 1 until smooth. Check the seasoning before serving into 4 bowls.

So there we have the first 3 soup recipes that we used when carrying out our thorough review of the Cuisinart SSB1U soup maker. As we reported in our review the ‘Tomato & Basil’ was the favourite as assessed by our tasting panel.
